Veggies and Fruit and Veggies and Fruit
Today I made a "Miracle Juice" smoothie. YUCK! Everyone says it's "delicious" "yummy" blah blah blah. Well let me tell you, after I doctored it up with pineapple and protein powder and some honey, I could at least drink it but I didn't like it. It is basically potato, carrot and an apple blended together. To increase the health benefits, you can add cucumber, tomato, pineapple and ginger. So being as health conscious as I am, I went for the gusto.... bleh. I drank half and froze the rest. I couldn't waste all that organic stuff! Lloyd is working on our compost and so all of the pulp and peels didn't go to waste either. Then this afternoon, I made Giada's recipe Rustic Vegetable and Polenta Soup. That turned out pretty good. I eliminated the salt and butter and just simmered the veggies, spices & herbs, organic polenta and organic low salt chicken stock. I had a piece of whole grain bread to soak up all the goodness and it was really filling and satisfying. I have enough left for 2 more meals. Now...what to have for dinner?????
